A failed inspection on kitchen exhaust normally comes with a correction period rather than an immediate closure, unless the grease load is judged an imminent hazard.
- Get a certified cleaning scheduled and dated in writing straight away
- Require before and after photographs of the duct and fan, not just the hood
- Ask for a certificate of performance naming the standard and the date
- Fix any missing access panels at the same visit, they are a separate finding
- Put the next cleaning on the calendar before the crew leaves
The reinspection is usually about the documentation as much as the metal.
