Grease trap rules are local, not national. The enforcing body is usually the municipal sewer or water authority, which is a different inspector from the fire marshal who looks at the hood.
Frequency is normally set by trap size and by the volume of grease produced, with a common rule requiring pumping once the trap is 25 percent full.
Paperwork beats condition
Keep every manifest. In most jurisdictions the record of proper disposal is what demonstrates compliance, and a missing manifest is a violation even if the trap is clean.
